10 oz sweetened condensed milk or fat-free sweetened condensed milk .
Filling .
1/2 c coconut milk (Thai Kitchen) .
1/4 c key lime juice (approximately 6 Key limes) .
3 egg whites .
1/4 c sugar .
3 egg whites .
Meringue .
1 (9 inch) graham cracker crust (prepared) .
1 tsp green food coloring (optional)
Directions
Step #1 Preheat oven to 250°F.
Step #2 In a large mixing bowl, coconut milk, mix lime juice, egg yolks, condensed milk, & food coloring on lowish speed of mixer until well-mixed (it should be creamy & slightly thickened) about 2 mins.
Step #3 In small mixing bowl, beat 3 egg whites until stiff peaks form.
Step #4 Fold into filling mixture along with salt.
Step #5 Pour into pie crust & spread evenly.
Step #6 Bake for 6 mins.
Step #7 While this is baking, beat remaining egg whites until stiff; slowly add 1/4 c sugar, beating to stiff peaks again.
Step #8 Cover up pie with this meringue, then return the pie to the oven until the meringue is golden brown (3 mins).
