Guava Cheese Recipe

Ingredients
  • 1 kg soft guavas .
  • 1 kg sugar (amount based on how much pulp you get out of the guavas)

Directions
  • Step #1 Cut the guavas into quarters & remove the seeds.
  • Step #2 Put the seeds in a sieve & add a small amount of water.
  • Step #3 Rub into the sieve & press down with a flat spoon so as to extract the pulp surrounding the seeds, into a bowl kept below the sieve.
  • Step #4 Blend the gauva pieces to a smooth pulp in your food processor/blender.
  • Step #5 Measure how many c of pulp you have - include the pulp removed from around the seeds.
  • Step #6 Put all the pulp into a large, flat, heavy-bottomed dish on a medium flame.
  • Step #7 Add sugar to the amount of one c less than the number of c of guava pulp.
  • Step #8 For example, if you had 6 c of pulp, add 5 c of sugar to it.
  • Step #9 Cook, stirring frequently, till it becomes hard to stir & the guava cheese begins to come away from the sides of the pan.
  • Step #10 Grease a platter & spoon the guava cheese onto it.
  • Step #11 Spread into a thick layer.
  • Step #12 Allow to cool a little & while still warm, cut into diamond shapes.
  • Step #13 When completely cooled, store this in an air-tight container.
