Da Beef Lover's Half Time Stuffed Meatloaf Recipe

Ingredients
  • 1/4 lb thinly sliced deli ham
  • 1/4 lb thinly sliced Swiss cheese
  • 1 egg
  • 2 lbs ground beef sirloin
  • 1 large green bell pepper, seeded & sliced
  • 1 (4 oz) can mushrooms, drained
  • 1 onion, sliced
  • 1 (12 fluid oz) can spinach, drained
  • salt & ground black pepper to taste
  • 1 c instant rice
  • 1 c grated Parmesan cheese
  • 1/4 lb thinly sliced salami
  • 1 lb ground beef round
  • garlic powder to taste

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Lightly grease a shallow roasting pan.
  • Step #3 Prepare instant rice according to package directions.
  • Step #4 In a large bowl, ground round, egg, sliced onion, mix together ground sirloin, green pepper, mushrooms & cooked rice.
  • Step #5 Spice up with garlic powder, salt & pepper.
  • Step #6 On clean counter top, arrange sheets of wax paper approximately 1 1/2 feet long by 1 foot wide.
  • Step #7 Place meat mixture on wax paper, & flatten into a large square, about 1/2 inch thick (the thinner the better).
  • Step #8 Sprinkle top with more garlic powder, then layer with parmesan, spinach, ham, salami & Swiss cheese.
  • Step #9 Using the wax paper, roll the meat as tightly as possible while removing the wax paper as you go.
  • Step #10 Tuck the two open ends into the meatloaf itself, & with hands lightly coated in vegetable oil, shape into a loaf.
  • Step #11 While lifting with the wax paper, transfer to shallow roasting pan, then slide wax paper out from underneath.
  • Step #12 Bake in preheated oven for 1 hr & 10 mins, or until meat is no longer pink & juices run clear.
  • Step #13 Allow to cool 15 mins before serving.
