Vegan Mocha Almond Muffins Recipe

Ingredients
  • 1/2 tsp baking soda .
  • 1 1/2 tsps almond extract .
  • 1 1/2 c whole wheat pastry flour .
  • 6 tbsps unsweetened cocoa powder .
  • 1/4 tsp salt .
  • 3/4 c strong coffee, lukewarm .
  • powdered sugar .
  • 1/4 c canola oil .
  • 1 tbsp rice wine vinegar .
  • 1/2 c slivered almonds .
  • 1/3 c rice syrup or pure maple syrup .
  • 1 tsp baking powder .
  • 1/2 c non-dairy chocolate chips (optional)

Directions
  • Step #1 Preheat oven to 325°F Prepare muffin tins with cooking spray or paper liners.
  • Step #2 In a large bowl, mix flour, baking soda, cocoa, baking powder, & salt.
  • Step #3 In a small bowl, oil, mix coffee, syrup, vinegar, & almond extract.
  • Step #4 Add wet ingredients to dry & stir until completely mixed.
  • Step #5 Add chocolate chips, if desired.
  • Step #6 Spoon batter into prepared muffin tins.
  • Step #7 Top with almonds.
  • Step #8 Bake for 20 mins, or until the tops are raised & spring back when touched.
  • Step #9 Let cool for 10 mins, remove this from pan, & sprinkle with powdered sugar.
