Persimmon Smoothie Recipe

Ingredients
  • 1/2 tsp coconut extract (optional) or vanilla extract (optional, I use both) .
  • 1/4 c coconut milk ("lite" is fine) .
  • 1/4-1/2 tsp pumpkin pie spice (preferred) or cinnamon .
  • 1 extremely ripe hachiya persimmon or 2 fuyu persimmons .
  • 3/4 c orange juice or tangerine juice .
  • 1 c canned coconut water .
  • 1 tsp bee pollen (I use High Desert) (optional)

Directions
  • Step #1 Measure liquid ingredients into mixer using container's indicator--fewer dishes to wash! Wash the persimmon(s), remove stem(s), & cut away any parts that look unappetizing.
  • Step #2 Toss into mixer with dry ingredients & mix until smooth.
