Steamed Mussels In Saffron Wine Broth Recipe

Ingredients
  • 2 shallots, sliced .
  • 1/4 c fresh parsley, finely sliced .
  • 1 quart fresh mussels, cleaned .
  • 1 lemon, halved .
  • 1/4 tsp saffron .
  • 1 c dry white wine

Directions
  • Step #1 In a deep saucepan, bring wine, shallots, saffron, & parsley to a boil.
  • Step #2 Add the mussels, cover & let simmer for 10-12 mins or until shells have opened (mussels will be firm but tender).
  • Step #3 Serve the mussels with their broth & lemon halves.
