Chipotle Chicken Chili Mac Recipe

Ingredients
  • 2 chipotle chiles in adobo, sliced with their juices .
  • 1 medium onion, sliced .
  • 8 oz smoked gouda cheese, shredded .
  • 12 oz beer .
  • 1 tbsp cumin .
  • 1 lb cavatappi pasta or macaroni .
  • 8 oz cheddar cheese, shredded .
  • 1 red bell pepper, cored, seeded & sliced .
  • 2 tbsps McCormick grill seasoning .
  • 3 celery ribs, sliced .
  • 2 tbsps fresh thyme leaves .
  • cilantro, finely sliced (optional) .
  • 1/4 lb shiitake mushroom caps, sliced .
  • 1 (15 oz) can black beans, drained .
  • 2 tbsps worcestershire sauce .
  • 2 lbs ground chicken .
  • 1/2 lb baby portabella mushrooms, sliced .
  • 1 small onion, finely sliced (optional) .
  • 4-6 garlic cloves, sliced .
  • 1 c chicken stock .
  • 1 (15 oz) can crushed tomatoes .
  • 3 tbsps extra virgin olive oil

Directions
  • Step #1 Heat a deep, large skillet or pot over high heat.
  • Step #2 Add 2 T extra-virgin olive oil & the meat.
  • Step #3 Spice up the meat with the grill seasoning & sear it, browning & crumbling it, for 3-5 mins.
  • Step #4 Transfer the meat to a plate & return the pot to the stove.
  • Step #5 Reduce the heat to medium high & add the remaining tbsp of extra-virgin olive oil.
  • Step #6 Add the mushrooms & begin to brown them before adding the other veggies.
  • Step #7 After 2-3 mins the mushrooms will begin to shrink & soften.
  • Step #8 Push the mushrooms off to one side of the pot & add all the remaining veggies to the opposite side of the pot.
  • Step #9 Once the onions, bell peppers & garlic have been working for a few mins, celery, mix the veggies with the mushrooms.
  • Step #10 Return the meat to the pan & season this with Worcestershire sauce, chipotle & cumin.
  • Step #11 Add the beer to deglaze the pot, scraping up all the pan drippings.
  • Step #12 Reduce the beer by half, 2 mins.
  • Step #13 Add the black beans, tomatoes, stock & thyme to the chili & let simmer for at least 10 mins to let the flavors mix.
  • Step #14 While the chili simmers, cook the pasta al dente & drain.
  • Step #15 Add the cooked pasta to the chili & stir this to mix.
  • Step #16 Pour the chili-mac into a 9 x 13 casserole dish & top this with a mixture of smoked Gouda & Cheddar.
  • Step #17 Melt the cheeses under a hot broiler 6 inches from the heat until golden.
  • Step #18 Garnish the dish with finely sliced raw onions & sliced cilantro.
