Ingredients
  • 1 c plain yogurt .
  • 1/8 tsp ground nutmeg .
  • 1 tbsp sugar .
  • 1 3/4 tsps kosher salt, divided .
  • 1 head cauliflower, broken into florets & halved (about 1 1/2 lbs) .
  • 1 tbsp olive oil .
  • 1/4 c sour cream .
  • 1/8 tsp cayenne pepper .
  • 1 medium yellow onion, finely sliced .
  • 1/3 c Italian parsley, coarsely sliced .
  • 1 tbsp curry powder .
  • fresh ground black pepper

Directions
  • Step #1 Fill a 4-quart saucepan with 2 inches of water & bring to a boil over high heat.
  • Step #2 Add the cauliflower & 1/4 tsp of the salt.
  • Step #3 Partially cover the pan, & cook the cauliflower until tender when pierced with a fork, adjust the heat so the water simmers, about 10 mins.
  • Step #4 Drain completely & transfer to a bowl.
  • Step #5 In a small saute pan over med-heat/flame, warm the olive oil & swirl to coat the pan.
  • Step #6 Add the onion & saute until soft & translucent, about 5 mins.
  • Step #7 Add the curry powder, remaining 1 1/2 tsp of salt, & the sugar.
  • Step #8 Stir constantly until the curry is fragrant, 1-2 mins longer.
  • Step #9 Remove from the heat.
  • Step #10 Use a fork to mash the cauliflower into very small pieces.
  • Step #11 Add the onion mixture & stir this to mix.
  • Step #12 Using a rubber spatula, stir in the the yogurt, parsley, nutmeg, sour cream, cayenne & a few grinds of pepper.
  • Step #13 Taste & adjust the seasonings.
  • Step #14 Transfer to a serving bowl & serve as soon as possible.
