Creamy Herbed New Potatoes Recipe

Ingredients
  • 2 tbsps low-fat sour cream .
  • 1 tbsp flaked sea salt .
  • 1 lb tiny new potatoes .
  • 1/2 tsp kosher salt .
  • 1 tbsp fresh parsley, choppped .
  • 1 tsp fresh coarse ground black pepper

Directions
  • Step #1 Scrub potatoes & (if large) cut into quarters.
  • Step #2 Cover up with water & bring to a boil.
  • Step #3 Reduce heat slightly & cook 10-15 mins or until tender.
  • Step #4 Drain well.
  • Step #5 Place potatoes in serving bowl & add sour cream.
  • Step #6 Stir carefully, lightly coating potatoes with sour cream.
  • Step #7 Stir in kosher salt, pepper, & parsley.
  • Step #8 Garnish with flake salt & serve.
