Vegetable Fried Rice Recipe

Ingredients
  • 1 c cabbage, shredded .
  • 1/2 c baguio beans, thinly sliced .
  • 1/2 c broccoli, cut into small florets .
  • 1 stalk green onions, cut into 1 inch length .
  • 3 tbsps cooking oil .
  • 1 medium onion, sliced thinly .
  • 1 medium ripe tomato, sliced thinly .
  • 1 egg, beaten .
  • 1/2 c frozen corn kernels .
  • 4 c cold cooked rice .
  • 1/2 c carrots, sliced into small cubes .
  • light soy sauce, to taste

Directions
  • Step #1 Heat few amount of oil in a wok.
  • Step #2 Add & cook the beaten egg until lightly brown.
  • Step #3 Flip to cook the opposite side.
  • Step #4 Transfer into a flat dish or chopping board, roll & cut thinly.
  • Step #5 Set aside.
  • Step #6 Heat the remaining oil in a wok, saute the onions & tomato until tender.
  • Step #7 Add all the vegetables & stir this to mix well.
  • Step #8 Spice up with light soy sauce.
  • Step #9 Cook for about 2-3 mins.
  • Step #10 Add rice to the mixture, stir until the rice is heated through.
  • Step #11 Turn off the heat.
  • Step #12 Transfer to a platter & garnish with the green onions & the cooked egg.
