Caramel-filled Brownies Recipe

Ingredients
  • 4 large eggs .
  • 1 1/2 c flour .
  • 1/3 c dark brown sugar, firmly packed .
  • 1 tbsp whipping cream .
  • 1 tbsp real vanilla extract .
  • 3 oz unsweetened chocolate .
  • 1 1/2 c white sugar .
  • 1/2 c salted butter, softened .
  • 1/4 c salted butter .
  • 2 tbsps light corn syrup

Directions
  • Step #1 Preheat oven to 325°F.
  • Step #2 Grease an 8x8 inch baking pan.
  • Step #3 In a small saucepan melt chocolate & 1/2 c butter over low heat/flame, stirring constantly.
  • Step #4 Remove from heat.
  • Step #5 In a large bowl, beat eggs using an electric mixer set on high until they thicken slightly.
  • Step #6 Slowly add the 1 1/2 c white sugar.
  • Step #7 Add vanilla & mix well.
  • Step #8 Add the chocolate-butter mixture & beat on medium until uniform.
  • Step #9 Add the flour & mix on lowish speed until just mixd.
  • Step #10 Do not overmix.
  • Step #11 Pour 1/2 of the brownie batter into the prepared pan.
  • Step #12 Smooth top.
  • Step #13 Bake 15-20 mins or until the top is firm.
  • Step #14 Heat 1/4 c butter, & corn syrup in a heavy pan over med-heat/flame, 1/3 c brown sugar, stirring constantly until the sugar dissolves.
  • Step #15 Increase the heat to high & boil 1 1/2 mins.
  • Step #16 Remove from heat & stir in the cream.
  • Step #17 Keep warm.
  • Step #18 Spread warm caramel evenly over top of baked brownie layer.
  • Step #19 Pour remaining half of brownie mixture over caramel, smoothing the top.
  • Step #20 Bake an extra 25-30 mins or until brownies test done (note: some caramel may stick to the toothpick).
  • Step #21 Cool brownies in pan, then cut into squares.
  • Step #22 I think these are best served chilled.
