Artichoke Nibbles Recipe

Ingredients
  • 2 tbsps olive oil .
  • 2 garlic cloves, finely sliced .
  • 1 tbsp fresh oregano, finely sliced .
  • 2 tbsps fresh parsley, finely sliced .
  • 4 eggs, beaten .
  • 12 oz artichoke hearts, drained & sliced .
  • 1 tsp salt .
  • 1/3 c breadcrumbs .
  • 1 medium onion, finely sliced .
  • 1/2 tsp pepper .
  • 1/4 tsp Tabasco sauce .
  • 1/2 lb sharp cheddar cheese, shredded

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 Grease a 9" square pan.
  • Step #3 Heat olive oil in skillet, add onion & garlic & cook this until soft, about 5 mins.
  • Step #4 In medium bowl mix onions & garlic with remaining ingredients; mix well.
  • Step #5 Bake 30-35 mins or until set in center.
  • Step #6 Cut into 36 squares.
  • Step #7 Can be frozen & reheated just before serving.
