Ingredients
1/4 c fresh parsley, sliced .
8-10 shallots, sliced thinly .
2 tsps herbes de provence .
2 tbsps cognac .
2 c red wine .
2 tbsps tomato paste .
2 slices bacon, sliced into pieces .
3 garlic cloves, sliced .
4 slices orange zest .
1 carrot, sliced .
2 tbsps olive oil .
1 (14 oz) can peeled tomatoes .
3 lbs boneless beef cubes .
salt & pepper
Directions
Step #1 heat oven to 325f.
Step #2 in a dutch oven heat oil & bacon, stirring until bacon is browned, remove to a plate.
Step #3 season beef with salt & pepper & cook in batches until browned on all sides, remove to plate.
Step #4 drain all but 1 tbs of drippings & add shallots, season this with salt & pepper, cook this until softened.
Step #5 add cognac & boil down.
Step #6 add tomato paste, herbes, garlic, stirring.
Step #7 add wine & liquid from tomatoes, bring to a boil.
Step #8 crush tomatoes by hand & add to pot, stirring.
Step #9 add zest & bacon to pot, add beef & carrots.
Step #10 lower to simmer, cover, & place this in oven.
Step #11 cook 2-3 hrs until beef is tender, stirring every 45 mins.
Step #12 add parsley, serve.
