Daube De Boeuf Recipe

Ingredients
  • 1/4 c fresh parsley, sliced .
  • 8-10 shallots, sliced thinly .
  • 2 tsps herbes de provence .
  • 2 tbsps cognac .
  • 2 c red wine .
  • 2 tbsps tomato paste .
  • 2 slices bacon, sliced into pieces .
  • 3 garlic cloves, sliced .
  • 4 slices orange zest .
  • 1 carrot, sliced .
  • 2 tbsps olive oil .
  • 1 (14 oz) can peeled tomatoes .
  • 3 lbs boneless beef cubes .
  • salt & pepper

Directions
  • Step #1 heat oven to 325f.
  • Step #2 in a dutch oven heat oil & bacon, stirring until bacon is browned, remove to a plate.
  • Step #3 season beef with salt & pepper & cook in batches until browned on all sides, remove to plate.
  • Step #4 drain all but 1 tbs of drippings & add shallots, season this with salt & pepper, cook this until softened.
  • Step #5 add cognac & boil down.
  • Step #6 add tomato paste, herbes, garlic, stirring.
  • Step #7 add wine & liquid from tomatoes, bring to a boil.
  • Step #8 crush tomatoes by hand & add to pot, stirring.
  • Step #9 add zest & bacon to pot, add beef & carrots.
  • Step #10 lower to simmer, cover, & place this in oven.
  • Step #11 cook 2-3 hrs until beef is tender, stirring every 45 mins.
  • Step #12 add parsley, serve.
