Chicken Kurma Recipe

Ingredients
  • 4 cardamoms .
  • 2 fresh red chilies, cut into half .
  • Pounded ingredients .
  • 1 c thick coconut milk .
  • salt, & .
  • 5 shallots .
  • 2 star anise .
  • 5 tbsps kurma curry powder, mixed with .
  • 1 large carrot, peel cut into 1-inch .
  • 3 cm cinnamon sticks .
  • 3 pieces tamarind pulp or 2 tbsps tamarind juice .
  • 1/2 c oil .
  • 2 white onions, cut into 6 wedges .
  • 1 tsp sugar .
  • 3 garlic cloves .
  • 1 large tomato, cut into 4 wedges .
  • 1 whole chicken, cut into 8 pieces .
  • 2 inches fresh ginger .
  • 1 stalk spring onions, cut into 1-inch .
  • 2 c plain water .
  • 3 large potatoes, peel & cut into 1/4 .
  • 3/4 c water

Directions
  • Step #1 Heat oil in a deep saucepan & fry lbed ingredients until fragrant.
  • Step #2 Add cinnamon, star anise & cardamom.
  • Step #3 Fry for 2 more mins.
  • Step #4 Add kurma curry powder paste & cook on low heat for 5 mins or until oil separates.
  • Step #5 Add chicken pieces & 2 c of water & cook chicken on low until half cook.
  • Step #6 Add coconut milk, potato, carrot & cook this until potato tender.
  • Step #7 Add more water if the gravy too thick.
  • Step #8 Add onions, chillies, tomatoes & tamarind.
  • Step #9 Cook for 2 more mins.
  • Step #10 Spice up with salt & sugar.
  • Step #11 Garnish with spring onion.
