4 (10 oz) angus boneless strip steaks, 10 oz each .
1 c white wine .
1/2 c olive oil .
salt .
2 garlic cloves, minced .
2 tbsps finely minced shallots .
1/4 c warm milk .
For the Shiitake Sauce .
1/2 c beef stock .
For the Steaks .
1/2 c sour cream, at about room temp .
12 basil leaves, minced .
1 c heavy cream .
nutmeg, to taste .
8 large shiitake mushrooms, sliced
Directions
Step #1 Pour the olive oil into a large glass dish or shallow bowl & mix with the garlic, salt, basil, & pepper.
Step #2 Rub this mixture into the steaks & marinate for 24 hrs, turning every once in awhile.
Step #3 Preheat the oven to 350 degrees.
Step #4 Bake the Idaho potatoes in the oven for about 1 hr, or until tender.
Step #5 Remove, split open lengthwise, scoop out the flesh, & reserve for another meal.
Step #6 Set the potato skins aside.
Step #7 While the Idaho potatoes are baking, place the red potatoes In a large-ish saucepan of salted water & bring to a boil.
Step #8 Turn down the heat & let simmer for about 20 mins, or until tender.
Step #9 Drain the potatoes & return to the sauce pan, stirring them over medium high heat for 1 min so they are dry.
Step #10 Add the milk, sour cream, & whisk or mash with a fork, & cheese, butter, leaving the potatoes a little chunky.
Step #11 Spice up with nutmeg, salt, & pepper & fill the potato skins with the mixture.
Step #12 Keep warm.
Step #13 Prepare the grill.
Step #14 While the potatoes are cooking, prepare the sauce.
Step #15 Melt the butter in a skillet over med-heat/flame, add the mushrooms, & sauté for 3 mins.
Step #16 Add the shallots & cook for 1 min longer.
Step #17 Add the wine & bourbon, & reduce the liquid until it has evaporated.
Step #18 Add the cream & stock, & reduce until the consistency is syrupy, 10 to 15 mins.
Step #19 Spice up with salt & pepper.
Step #20 Remove the steaks from the marinade & grill over high heat for about 4 mins on each side for medium-rare, about 5 mins on each side for medium, or to the desired doneness.
Step #21 Transfer to warm serving plates & add a filled potato half to each plate.
Step #22 Spoon the sauce around each plate & garnish with the chives.
