Oven-roasted Fruit With Caramel Sauce Recipe

Ingredients
  • 1 tbsp fresh lemon juice (please use the real thing) .
  • 3/4 c granulated sugar .
  • 2 tbsps unsalted butter .
  • 1/4 c corn syrup .
  • 1 tsp minced fresh ginger .
  • OVEN-ROASTED FRUIT .
  • 1 tbsp pure vanilla extract .
  • 4 star anise (kosher for Pesach) .
  • 1 3/4 c heavy cream .
  • 1 1/2 lbs mixed dried fruit (peaches, pears, prunes, apples, figs, & or or apricots) .
  • 1 c cold water .
  • 1 c packed light brown sugar .
  • 1/2 c raisins .
  • 10 cloves (kosher for Pesach) .
  • CARAMEL SAUCE .
  • 2 c dry white wine (kosher for Pesach)

Directions
  • Step #1 Place the dried fruit & raisins in a heatproof bowl & cover with boiling water.
  • Step #2 Allow to stand for 30 mins, or until the fruit has plumped.
  • Step #3 Drain off all the soaking liquid, reserving 1 c.
  • Step #4 Place the fruit & the reserved soaking liquid In a large-ish saucepan.
  • Step #5 Add the wine, place over med-heat/flame, star anise, cloves, ginger, & cinnamon stick, & bring to a boil.
  • Step #6 Immediately lower the heat to a low simmer, cover, & let simmer for about 15 mins, or until the fruit is quite soft.
  • Step #7 Remove from the heat & drain well, discarding the spices.
  • Step #8 Meanwhile, preheat the oven to 450ºF.
  • Step #9 Lightly butter a baking sheet.
  • Step #10 Spread the poached fruit & the nuts out on the baking sheet, leaving space between the fruit.
  • Step #11 Brush the tops with the melted butter.
  • Step #12 Roast for 10 mins, or until the fruit is just beginning to color.
  • Step #13 Serve in individual bowls, drizzled with caramel sauce.
  • Step #14 CARAMEL SAUCE:.
  • Step #15 Combine the brown & granulated sugars with 1 c cold water in a heavy medium saucepan over med-heat/flame & bring to a boil.
  • Step #16 Boil for 12 mins, or until the syrup is a rich caramel color, brushing down the sides of the pan with a wet pastry brush from time to time to dissolve any sugar crystals that form.
  • Step #17 Taking care as the syrup may bubble over, whisk in the corn syrup, lemon juice, & vanilla & bring to a simmer.
  • Step #18 Carefully whisk in the cream, & boil carefully for 10 mins, bring to a boil, or until the sauce is thick.
  • Step #19 Whisk in the butter & serve hot.
