Sausage Soup With Tortellini Recipe

Ingredients
  • 4 medium tomatoes, peeled, seeded & sliced .
  • 8 oz frozen meat-filled tortellini or cheese tortellini .
  • 1/2 c dry red wine or water .
  • 1/2 tsp oregano .
  • 1/2 c water .
  • 1 c onions, sliced coarsely .
  • 1 lb Italian sausage .
  • 1 medium green pepper, cut in 1/2 inch pieces .
  • 1/2 tsp basil .
  • 2 garlic cloves, sliced .
  • 8 oz tomato sauce .
  • 3 tbsps fresh parsley, sliced .
  • 1 c carrots, thinly sliced .
  • grated parmesan cheese .
  • 5 c beef broth

Directions
  • Step #1 Remove sausage from casing & brown in a 5-quart Dutch oven.
  • Step #2 Remove sausage; drain, reserving 1 T of the drippings in Dutch oven.
  • Step #3 Saute onions & garlic in drippings until onions are tender.
  • Step #4 Add beef broth, carrots, water, wine, basil, tomatoes, oregano & tomato sauce & bring to a boil.
  • Step #5 Reduce heat; simmer uncovered 30 mins.
  • Step #6 Skim fat from soup.
  • Step #7 Stir in tortellini, parsley & green pepper.
  • Step #8 Simmer covered an extra 35-40 mins or until tortellini are tender.
  • Step #9 Sprinkle top Parmesan cheese on top of each serving.
