Asparagus With Ham, Eggs And Garlic Crumbs Recipe

Ingredients
  • 1/2 c coarse breadcrumbs .
  • 1 garlic clove, crushed .
  • salt .
  • 2 eggs .
  • 100 g ham, thinly sliced .
  • 15 g butter .
  • fresh ground black pepper, to taste .
  • 250 g asparagus .
  • fresh chives, finely sliced (to garnish) .
  • 2 tsps olive oil

Directions
  • Step #1 Place eggs in saucepan & cover with hot water (from the tap is fine).
  • Step #2 Bring to the boil & boil for 3 mins.
  • Step #3 Drain eggs & place this in a bowl of cold water to cool.
  • Step #4 Peel eggs & cut into quarters.
  • Step #5 Melt butter in frying pan & add breadcrumbs & garlic.
  • Step #6 Cook over med-heat/flame until crisp & golden.
  • Step #7 Snap asparagus spears in half (by holding by each end) & discard hard ends.
  • Step #8 Brush asparagus with oil & cook asparagus & ham on barbeque over med-heat/flame, turning frequently, until asparagus is tender & ham is crispy.
  • Step #9 Place asparagus on serving plate & top this with eggs, ham & garlic breadcrumbs.
  • Step #10 Sprinkle top with chives & salt & ground black pepper if using.
