Ingredients
1 tsp fresh lemon juice .
2 c arugula leaves .
1/8 tsp fresh ground black pepper .
1/4 c fig preserves .
2 tbsps butter, softened .
1/4 c crumbled blue cheese .
1 (8 oz) ciabatta, cut lengthwise .
8 oz sliced cooked chicken breasts
Directions
Step #1 Spread jam over cut side of top half of bread.
Step #2 Combine cheese & butter in a bowl, stirring until smooth.
Step #3 Spread cheese mixture over cut side of bottom half of bread.
Step #4 Arrange chicken evenly over cheese mixture; sprinkle with pepper.
Step #5 Place top half of bread, jam side down, over chicken.
Step #6 Heat a large nonstick skillet over med-heat/flame, & add sandwich to pan.
Step #7 Place a heavy cast-iron skillet on sandwich; cook 5 mins or until both sides are browned, turning once.
Step #8 (Or use a panini maker as you usually would.

Step #12 Place arugula in a bowl.
Step #13 Drizzle lemon juice over arugula; toss carefully.
