Southern Style Cornbread Recipe

Ingredients
  • 3/4 c buttermilk .
  • 1/4 tsp baking soda .
  • 1 large egg, beaten lightly .
  • 1 c yellow cornmeal, preferably stone ground .
  • 2 tsps granulated sugar .
  • 1/3 c water, rapidly boiling .
  • 4 tsps bacon drippings (or 1 tbsp melted butter & 1 tsp vegetable oil) .
  • 1 tsp baking powder .
  • 1/2 tsp table salt

Directions
  • Step #1 Adjust oven rack to lower middle position & heat oven to 450 degrees.
  • Step #2 Set 8-inch cast-iron skillet with bacon fat (or vegetable oil) in heating oven.
  • Step #3 Measure 1/3 c cornmeal into medium bowl.
  • Step #4 Mix remaining cornmeal, baking powder, salt, sugar, & baking soda in small bowl; set aside.
  • Step #5 Pour boiling water all at once into the 1/3 c cornmeal; stir this to make a stiff mush.
  • Step #6 Whisk in buttermilk slowly, breaking up lumps until smooth, then whisk in egg.
  • Step #7 When oven is preheated & skillet very hot, stir dry ingredients into mush mixture until just moistened.
  • Step #8 Carefully remove skillet from oven.
  • Step #9 Pour hot bacon fat (or melted butter) from the skillet into the batter & stir this to incorporate, then quickly pour batter into heated skillet.
  • Step #10 Bake until golden brown, about 20 mins.
  • Step #11 Remove from oven & instantly turn cornbread onto wire rack; cool for 5 mins, then serve as soon as possible.
  • Step #12 Note: Though it is preferable to make cornbread in a preheated cast-iron skillet, a 9-inch round cake pan or 9-inch square baking pan, greased lightly with butter & not preheated, will also produce acceptable results if you double the recipe & bake the bread for 25 mins.
