Gluten-free Persimmon Pecan Cake Recipe

Ingredients
  • 1 tbsp pumpkin pie spice .
  • 1/2 c butter, melted .
  • 1 tsp ginger .
  • 1 tsp baking powder .
  • 1 tsp vanilla .
  • 3/4 c buttermilk .
  • 1 1/2 c gluten-free flour, mix .
  • 1 c sliced pecans, toasted .
  • 4 eggs .
  • 1/2 c sugar .
  • 2 tbsps coconut flour .
  • 1 tsp cardamom .
  • 2 c hachiya persimmon pulp .
  • 1/2 tsp salt .
  • 1 tsp baking soda

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Grease a 8" round cake pan.
  • Step #3 In a large bowl, butter, eggs, mix persimmon pulp, buttermilk & vanilla.
  • Step #4 In a separate bowl, sugar, mix flour, baking soda, baking powder, salt & spices.
  • Step #5 Slowly fold the dry ingredients to the wet ingredients.
  • Step #6 Mix until thoroughly mixd.
  • Step #7 Add sliced nuts & stir this to incorporate.
  • Step #8 Pour into cake pan & bake for about 50 mins.
  • Step #9 When done, the center will still be very moist & soft (it may seem undercooked), but the outside of the cake should have formed a firm crust & be well-browned.
  • Step #10 Remove from oven & allow this to cool in the pan for at least 20 mins before serving.
  • Step #11 Slice & serve warm.
