Green Chile Stew Recipe

Ingredients
  • 1 (15 oz) can pinto beans .
  • 3 carrots, sliced .
  • 1 onion, sliced .
  • 2 c green chili sauce .
  • 2 lbs chuck roast, lean & cubed .
  • flour tortillas .
  • 1 tbsp vegetable oil .
  • 1 (7 oz) can green chilies, sliced .
  • salt & pepper .
  • 1 (15 oz) can stewed tomatoes .
  • 1 green bell pepper or red bell pepper, sliced .
  • 1 garlic clove, crushed .
  • 2 c water .
  • 3 potatoes, cubed

Directions
  • Step #1 Remove all visible signs of fat from beef.
  • Step #2 In large pot, oion, brown meat, pepper & garlic in oil.
  • Step #3 Add remaining ingredients & bring mixture to a boil.
  • Step #4 Reduce heat, cover & let simmer for 1-1/2 hrs.
  • Step #5 Serve with warmed flour tortillas.
