White Bean & Bacon Soup Recipe

Ingredients
  • 1 c carrots, cut in 1/4-inch cubes .
  • 1/2 lb bacon, cut in 1/2-inch pieces .
  • 1 c celery, cut in 1/4-inch cubes .
  • salt & freshly ground black pepper .
  • 1 (15 oz) can small white beans, with liquid .
  • 1 large potato, cut in 1/4-inch cubes .
  • 2 c chicken stock .
  • 1 c finely sliced onions .
  • 1 garlic clove, minced

Directions
  • Step #1 In a large heavy saucepan, cook the bacon over med-heat/flame until crispy.
  • Step #2 Remove from pan with a slotted spoon & set aside.
  • Step #3 Pour off all except about 2 tbsps of the bacon drippings.
  • Step #4 Add onions, stirring frequently, & celery to pan & sauté, carrots, until onions are translucent.
  • Step #5 Add garlic & sauté a few more mins.
  • Step #6 Add potatoes, chicken stock, beans, & reserved bacon.
  • Step #7 Spice up to taste with salt & freshly ground pepper.
  • Step #8 Bring to a boil; let boil for about 10 mins, stirring every once in awhile.
  • Step #9 Reduce heat to medium low.
  • Step #10 Cover up & let simmer about 1 hr, stirring every once in awhile.
