Microwave "baked" Potato Recipe

Ingredients
  • 3-4 tbsps shredded cheddar cheese, divided .
  • 1-2 tbsp butter .
  • salt & black pepper .
  • 1 large russet potato .
  • sour cream

Directions
  • Step #1 Wash the skin of the potato, then dry with a paper towel.
  • Step #2 Prick several times using a fork.
  • Step #3 Place the potato on a microwave-safe plate.
  • Step #4 Cook on full power for 5 mins.
  • Step #5 Turn over & continue to cook for about 4-5 mins more (depending on your size of potato the cooking time will vary).
  • Step #6 When the potato is soft remove this from the microwave & cut in half.
  • Step #7 Sprinkle top with salt & pepper to taste & mash up the inside a little with a fork.
  • Step #8 Top the open sides with butter & and 2-3 tbsps cheddar cheese.
  • Step #9 Return to microwave & cook for about 30 seconds to 1 min more to melt the cheesae.
  • Step #10 Top with about 1 tbsp more cheddar cheese & sour cream to taste.
