Apricot And Date Chutney Recipe

Ingredients
  • 1 c brown sugar .
  • 1 tsp ground red chili pepper .
  • 1 tbsp salt .
  • 1 1/2 tsps mustard seeds .
  • 1 1/4 c white vinegar .
  • 1/2 c glace candied ginger, sliced .
  • 3 1/2 c dried apricots, quartered .
  • 1 1/2 c sultanas .
  • 2 c dates, sliced

Directions
  • Step #1 Cover up apricots with water & set aside to soak for one hr.
  • Step #2 Drain the apricots.
  • Step #3 Combine apricots, sultanas & vinegar In a large-ish saucepan.
  • Step #4 Bring slowly to the boil & let simmer for 10 mins, or until the liquid as almost evaporated.
  • Step #5 Stir in all of the remaining ingredients & add one c of water.
  • Step #6 Simmer for 5 mins, until the chutney has thickened.
  • Step #7 Pour into jars & seal.
  • Step #8 Makes approx 6 c of chutney.
