Ingredients
  • 1 tbsp baking powder .
  • 1/4 c egg beaters 99% egg substitute .
  • 1/8 tsp baking soda .
  • 1/4 c margarine (melted) .
  • 1/2 c nonfat sour cream .
  • 2 c all-purpose flour .
  • 1/2 tsp salt .
  • 1/2 c granulated sugar .
  • 3/4 c skim milk .

Directions
  • Step #1 Pre-heat oven to 425F degrees F & lightly spray a muffin tin with cooking spray.
  • Step #2 In a large mixing bowl, baking soda, salt, mix sifted flour, baking powder, and.
  • Step #3 sugar.
  • Step #4 Stir to mix dry ingredients.
  • Step #5 In a small mixing bowl, sour cream, mix melted margarine, egg substitute, & skim milk.
  • Step #6 Blend with a wire whisk until wet ingredients are thoroughly mixd.
  • Step #7 Add liquid ingredients to the dry ingredients & stir until just mixed.
  • Step #8 Spoon the batter into the muffin tins, equally distributing the batter to each well.
  • Step #9 Bake for 15 to 20 mins until the muffins are golden brown.
  • Step #10 Remove the muffin tins to a wire rack & let cool for about 5 mins.
  • Step #11 Invert tins & completely cool muffins.
  • Step #12 Store in an airtight container for up to 3 days.
