Leeks In Yoghurt Sauce Recipe

Ingredients
  • for the sauce .
  • 3 egg yolks .
  • 6 sprigs fresh parsley .
  • 1 tsp salt .
  • 6 coriander seeds .
  • salt & pepper .
  • 2 tsps lemon juice .
  • to garnish .
  • for the stock .
  • 12 fennel seeds .
  • 3/4 pint water .
  • 2 shallots, sliced .
  • 12 black peppercorns .
  • 8 small leeks, cleaned .
  • fresh parsley .
  • 8 fluid oz natural yoghurt .
  • Dijon mustard .
  • 1 large lemon, juice of

Directions
  • Step #1 Bring the water to the boil & add the lemon juice, spices, herbs & shallots.
  • Step #2 Cook for 10 mins to make a vegetable stock.
  • Step #3 Place leeks in a frying pan & cover with the vegetable stock.
  • Step #4 Simmer, covered for 10-15 mins until leeks are soft.
  • Step #5 Leave to cool.
  • Step #6 Beat the yoghurt, egg yolks & lemon juice together & place over a pan of carefully simmering water.
  • Step #7 Cook, stirring frequently, for about 15 mins until thickened.
  • Step #8 Spice up with salt, pepper & mustard.
  • Step #9 Drain the leeks & cut into 2 or 3 diagonal pieces.
  • Step #10 Arrange in a serving dish, spoon over the yoghurt sauce & sprinkle with parsley.
  • Step #11 Allow to cool completely before serving.
