Broccoli Cheese Souffle Recipe

Ingredients
  • 4 tbsps flour .
  • 1/2 c milk .
  • 1 dash nutmeg .
  • 1 c cheddar cheese, grated .
  • 3 egg whites, whipped into fluffy mounds .
  • 1 c fresh broccoli florets, finely sliced .
  • 1 onion, finely sliced .
  • 4 tbsps butter

Directions
  • Step #1 Preheat oven to 350 F, fill round cake pan or pie pan with 1/2 inch boiling water.

  • Step #3 Steam broccoli florets until tender.
  • Step #4 2.
  • Step #5 Melt butter in medium sauce pan.
  • Step #6 3.
  • Step #7 Add flour to melted butter until smooth.
  • Step #8 4.
  • Step #9 Slowly stir in the milk.
  • Step #10 5.
  • Step #11 Once mixture is smooth add onion, nutmeg & cheese.
  • Step #12 6.
  • Step #13 Add broccoli to mix.
  • Step #14 7.
  • Step #15 Whipp egg whites into soft peaks.
  • Step #16 8.
  • Step #17 Slowly fold in cheese mixture, do not stir.
  • Step #18 9.
  • Step #19 Pour egg & cheese mixture into round csserole dish with high sides, approx 1 1/2 quart.
  • Step #20 10.
  • Step #21 Place dish in pan with water, bake for 50-60 mins.
