Mexican Pork Corn And Kidney Bean Chili Recipe

Ingredients
  • 1 1/2 tbsps chili powder .
  • 1 small green pepper (Chopped) .
  • 1 small yellow onion (Chopped) .
  • 2 tsps cumin .
  • 2 tsps olive oil .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 1 (15 1/4 oz) can corn (Drained) .
  • 1 stalk celery (Chopped) .
  • 1/2 lb pork tenderloins (cut in 1/2 cubes) .
  • 1 (16 oz) can red kidney beans (Drained) .
  • salt & pepper (to your taste)

Directions
  • Step #1 In a large nonstick skillet, heat oil.
  • Step #2 Add the pork,celery,green pepper.
  • Step #3 Cook 5 mins.
  • Step #4 Toss to brown on all sides.
  • Step #5 Add beans, corn, tomatoes, chili powder & cumin.
  • Step #6 Lower heat to medium & let simmer for 15 mins.
  • Step #7 Spice up with Salt & Pepper to taste.
