Peanut Butter Bars Recipe

Ingredients
  • 1/2 c dried cranberries .
  • 1/4 c butter or margarine, softened .
  • 1/4 c boiling water .
  • 1/2 c peanut butter, chunky .
  • 2/3 c peanut butter, chunky .
  • 1 c all-purpose flour .
  • 1 tbsp lemon juice .
  • 1/3 c brown sugar, packed .
  • 6 oz cream cheese, softened .
  • 1/4 c egg substitute .
  • 1/2 c peanuts, finely sliced .
  • 1/4 c granulated sugar

Directions
  • Step #1 Preheat oven to 350 degree F.
  • Step #2 Grease an 8x8x2-inch baking pan; set aside.
  • Step #3 In a small bowl mix cranberries & water.
  • Step #4 Cover up & let this stand 20 mins.
  • Step #5 Drain well.
  • Step #6 In a large mixing bowl beat the butter & 1/2 c peanut butter with an electric mixer until well mixd.
  • Step #7 Beat in the brown sugar.
  • Step #8 Beat in the flour on lowish speed (mixture will be crumbly).
  • Step #9 Stir in the peanuts & drained cranberries.
  • Step #10 Reserve 1 c of the crumb mixture.
  • Step #11 Press remaining crumb mixture into the bottom of the prepared pan.
  • Step #12 Bake for 12 mins.
  • Step #13 Meanwhile, for filling, in a medium bowl beat the cream cheese & granulated sugar with an electric mixer until smooth.
  • Step #14 Add the egg, 2/3 c peanut butter, & lemon juice; beat until well mixd.
  • Step #15 Spread evenly over crust.
  • Step #16 Sprinkle top reserved crumb mixture over top, pressing lightly into filling.
  • Step #17 Bake about 25 mins more or until top is lightly browned & edges are puffed.
  • Step #18 Cool on a wire rack.
  • Step #19 *Note: Do not use natural peanut butter in this recipe.
