Spicy Vodka Cream Pasta With Hot Sausage Recipe

Ingredients
  • 1/2 c heavy whipping cream .
  • 2 shallots, minced .
  • 1 (32 oz) can crushed tomatoes .
  • 1 c marinara sauce .
  • 4 andouille sausages or hot Italian sausage links .
  • 16 oz rigatoni pasta or penne pasta .
  • 1 c vodka .
  • 1 tbsp red peppers .
  • 1/2 c fresh basil leaves, sliced .
  • 2 garlic cloves, minced .
  • 1 tbsp butter .
  • salt & pepper

Directions
  • Step #1 Slice sausage links into ½ inch rounds & brown for several mins In a large-ish sauté pan.
  • Step #2 Add butter, garlic, & shallots.
  • Step #3 Sauté shallots for 3 to 5 mins.
  • Step #4 Add vodka & heat 4-5 mins to reduce vodka by half.
  • Step #5 Add marinara sauce, can tomatoes & red pepper.
  • Step #6 Bring sauce to a boil & reduce heat to simmer for approximately 10 mins.
  • Step #7 While sauce is simmering, cook pasta until it is al dente.
  • Step #8 Add cream into sauce & return to a boil.
  • Step #9 Add drain pasta to the sauce & add the basil leaves.
  • Step #10 Add salt & pepper to taste.
