Ingredients
1 (6 lb) beef brisket, whole, outer fat trimmed .
1 1/2 tsps dried thyme or 1 tbsp fresh thyme .
6 garlic cloves, thinly sliced .
1 1/2 tsps dried rosemary or 1 tbsp fresh rosemary .
1/2 c molasses, unsulfured .
3 c apple cider, as needed .
kosher salt .
fresh ground black pepper .
2 tbsps vegetable oil .
3 large onions, halved lenghtwise, thinly sliced into half moons
Directions
Step #1 Position rack in the center of the oven & heat to 325F dgrees F.
Step #2 heat the oil In a large-ish Dutch oven or small roasting pan over medium-high heat.
Step #3 Add the brisket & cook, turning once until browned on both sides, about 8 mins.
Step #4 Transfer to a plate.
Step #5 Add the onions to the same pot & cook, just until softened, stirring every once in awhile, about 5 mins.
Step #6 Place the brisket on top of the onions, add the cider & molasses & sprinkle with the garlic & herbs.
Step #7 If necessary, add more cider (or even water) to almost cover the brisket.
Step #8 Bring to a simmer then cover tightly & place this in the oven & bake for 3 hrs or until fork tender.
Step #9 Uncover & let the brisket cool in the pot.
Step #10 Cover up & put in the fridge until the next day.
Step #11 Scrape off & discard any hardened fat on the surface of the cooking liquid.
Step #12 Transfer meat to a carving board & slice thinly against the grain.
Step #13 Meanwhile, bring the cooking liquid to a boil over high heat.
Step #14 Taste & if the flavor needs concentrating, simmer for a few mins to evaporate excess liquid.
Step #15 Spice up with salt & pepper to taste.
Step #16 Return the sliced brisket to the liquid , reduce the heat to medium-low; simmer until heated through.
Step #17 Serve hot with the onions.
