Grilled Salmon In Champagne Sauce Recipe

Ingredients
  • 2 tbsps sliced shallots .
  • 1/2 lb salmon fillets, about 1-inch inch thick .
  • 1/2 tbsp Dijon mustard .
  • 1/4 tsp dried tarragon .
  • 3 tbsps sour cream .
  • salt & pepper .
  • olive oil .
  • extra tarragon .
  • 1/2 c champagne

Directions
  • Step #1 Heat grill to medium heat.
  • Step #2 Paint each fillet on both sides with olive oil; salt & pepper.
  • Step #3 Place on grill & cook for approximately 3-7 mins on each side, depending on your choice of doneness.
  • Step #4 Remove to heated platter & cover.
  • Step #5 Heat 1 teas.
  • Step #6 olive oil in saute pan over medim heat; add shallots.
  • Step #7 Saute about 1 1/2 mins to soften.
  • Step #8 Reduce heat to med-low.
  • Step #9 Stir in Champagne, mustard, salt(if desired) & tarragon.
  • Step #10 Blend well.
  • Step #11 Remove from heat, stir in the sour cream.
  • Step #12 Place half of sauce on heated serving plate; top this with salmon fillet & garnish with very light sprinkle of tarragon.
  • Step #13 Serve.
