Turkey Calabacitas Recipe

Ingredients
  • shredded sharp cheddar cheese .
  • 16 1/4 oz corn, drained .
  • 2 c sliced zucchini .
  • 1 lb ground turkey .
  • 1 (8 oz) can tomato sauce (rinse can with a little water & add to skillet) .
  • 2 garlic cloves, crushed .
  • olive oil (optional) .
  • hot cooked rice .
  • 1/4 c sliced hatch chilies (see note) .
  • dried basil (about 1 tsp) .
  • dried oregano (about 1 tsp) .
  • salt & pepper

Directions
  • Step #1 In a nonstick pan, if desired, stir-fry ground turkey in a little olive oil, over med-heat/flame with the garlic & Chile.
  • Step #2 Add salt, pepper, basil & oregano to taste.
  • Step #3 When the turkey is fully cooked, add zucchini, corn & tomato sauce; stir & let simmer for about 15 mins.
  • Step #4 Serve over rice & sprinkle cheese over top.
