Cajun Chicken Bites With Apricot Mustard Sauce Recipe

Ingredients
  • 2 tbsps unsalted butter .
  • 1 tbsp garlic powder .
  • 1 tsp white pepper .
  • 2 tsps ground cayenne pepper .
  • 6 tbsps dijon-style mustard .
  • 2 tbsps vegetable oil .
  • 5 boneless skinless chicken breast halves, cut into bite size pieces .
  • 1 tsp salt .
  • 2 tsps dried thyme, finely crumbled .
  • 1 1/2 c apricot preserves .
  • 2 tsps fresh ground black pepper

Directions
  • Step #1 Combine all dry ingredients in a small bowl or plastic bag & stir or shake to mix well.
  • Step #2 Sprinkle top chicken pieces with spice rub & let this stand for about 30 mins.
  • Step #3 To make apricot mustard sauce, mix preserves & mustard in a small saucepan over low heat/flame; stir this to mix & heat carefully until the preserves melt & are thoroughly mixed with the mustard.
  • Step #4 Set aside to cool.
  • Step #5 Heat butter & oil in sauté pan or skillet over medium high heat, add chicken pieces & sauté until just done, about 5 mins.
  • Step #6 Remove with slotted spoon & drain briefly on paper towel.
  • Step #7 Serve hot with apricot mustard dipping sauce.
