5 boneless skinless chicken breast halves, cut into bite size pieces .
1 tsp salt .
2 tsps dried thyme, finely crumbled .
1 1/2 c apricot preserves .
2 tsps fresh ground black pepper
Directions
Step #1 Combine all dry ingredients in a small bowl or plastic bag & stir or shake to mix well.
Step #2 Sprinkle top chicken pieces with spice rub & let this stand for about 30 mins.
Step #3 To make apricot mustard sauce, mix preserves & mustard in a small saucepan over low heat/flame; stir this to mix & heat carefully until the preserves melt & are thoroughly mixed with the mustard.
Step #4 Set aside to cool.
Step #5 Heat butter & oil in sauté pan or skillet over medium high heat, add chicken pieces & sauté until just done, about 5 mins.
Step #6 Remove with slotted spoon & drain briefly on paper towel.
Step #7 Serve hot with apricot mustard dipping sauce.
