Cranberry Lemon Sandwiches Recipe

Ingredients
  • 1 tsp grated lemon peel
  • 1 1/4 tsps grated lemon peel
  • 2 tsps vanilla extract
  • 1 c butter or margarine, softened
  • 1 tsp cream of tartar
  • 1 c sugar
  • 1 c shortening
  • 1/2 tsp salt
  • 3/4 c dried cranberries
  • 2 eggs
  • 1/4 c milk
  • 2/3 c butter or margarine, softened
  • 1 c confectioners' sugar
  • 4 c all-purpose flour
  • 2 3/4 c confectioners' sugar
  • FILLING:

Directions
  • Step #1 In a mixing bowl, cream butter, shortening & sugars.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Beat in vanilla.
  • Step #4 Combine flour, cream of tartar, lemon peel & salt; slowly add to the creamed mixture.
  • Step #5 Stir in cranberries.
  • Step #6 Cover & put in the fridge for 2 hrs or until easy to handle.
  • Step #7 Roll into 1-in.
  • Step #8 balls.
  • Step #9 Place 2 in.
  • Step #10 apart on ungreased baking sheets.
  • Step #11 Flatten with a glass dipped in sugar.
  • Step #12 Bake at 350 degrees F for 12-14 mins or until edges are lightly browned.
  • Step #13 Remove to wire racks to cool.
  • Step #14 Combine filling ingredients in a mixing bowl; beat until smooth.
  • Step #15 Spread on the bottom of half of the cookies; top this with remaining cookies.
