Arroz Con Pollo Recipe

Ingredients
  • 3 tbsps all-purpose flour .
  • 1/4 tsp pepper .
  • 1 c frozen peas .
  • 8 oz sausage links, brown & serve links .
  • 1/2 tsp salt .
  • 1/4 c olives, ripe, sliced & pitted .
  • 2 c water .
  • 1/2 c celery, sliced .
  • 1 (7 1/2 oz) can tomatoes, cut up .
  • 1 c long grain rice .
  • 1 c onions, sliced .
  • 2 lbs skinless chicken pieces (breasts, thighs, drumsticks) .
  • 1 tbsp cooking oil

Directions
  • Step #1 Cut the sausages into 1/2 inch pieces; brown sausages in a kettle.
  • Step #2 Remove sausages.
  • Step #3 Set aside.
  • Step #4 Place the flour, salt, & pepper in a plastic bag.
  • Step #5 Add chicken, a few pieces at a time, & shake to coat.
  • Step #6 In the kettle, heat oil over med-heat/flame.
  • Step #7 Add chicken & cook, uncovered, for 10 mins, turning to brown evenly.
  • Step #8 Add the water, onion, & celery to chicken in kettle.
  • Step #9 Simmer, covered, for 20 mins.
  • Step #10 Add uncooked rice, undrained tomatoes, & sausages.
  • Step #11 Simmer, covered, about 20 mins more or until rice is tender.
  • Step #12 Add peas & olives; cook & stir until heated through.
