Maple - Ginger Apple Pie
5-minute Maple-glazed Carrots
Ingredients
2 tbsps granulated sugar .
1 (8 oz) package cream cheese, softened .
1 (17 1/4 oz) package frozen puff pastry, thawed (2 sheets) .
1/4 c confectioners' sugar .
4 medium apples (Empire, Gala, or Golden Delicious) .
1 tsp vanilla .
1/2 c pure maple syrup, at least 1/2 c .
1 large egg, beaten lightly with 1 tbsp water
Directions
Step #1 Preheat oven to 375°F.
Step #2 In a small bowl stir this together cream cheese, confectioners' sugar, & vanilla until smooth.
Step #3 Peel, halve, & core apples & cut into 1/4-inch slices.
Step #4 Place apples in a saucepan & cover with maple syrup -- about a 1/2 c, but eyeball it to your liking.
Step #5 Stir over low-heat until apples are softened.
Step #6 Remove apples & place this in a bowl to cool.
Step #7 Do not discard syrup, as you'll use it later for the glaze.
Step #8 Unroll puff pastry & place one sheet inside a 9" baking pan.
Step #9 Spread cream cheese mixture on pastry sheet & top this with apples.
Step #10 Place the second pastry sheet on top of the apples & seal the edges by folding pastry sheet edges together.
Step #11 Brush egg wash over top of pie & edges & sprinkle with sugar.
Step #12 Bake pie in middle of oven 30 mins, or until puffed & golden.
Step #13 Meanwhile, depending on how watery the syrup is from the apples, you might want to add more syrup to the pan.
Step #14 Simmer the maple syrup for 10 mins, or until reduced to about 1/3 c.
Step #15 Drizzle hot syrup glaze over warm pie.
