Grilled Corn On The Cob W/ Chipotle, Molasses, And Orange Glaze Recipe

Ingredients
  • 2 tbsps frozen orange juice concentrate .
  • 2 tsps mild-flavored molasses (light) .
  • 1/4 tsp salt .
  • 2 tsps minced canned chipotle chiles .
  • 6 ears corn, shucked .
  • 2 tbsps sliced fresh cilantro .
  • 1/4 c unsalted butter (1/2 stick)

Directions
  • Step #1 Prepare barbecue (medium-high heat)-- Mix butter, chipotle chiles, orange juice concentrate, molasses, & salt in microwave-safe bowl.
  • Step #2 Microwave on high until melted, about 20 seconds (or melt butter in saucepan with next 4 ingredients over medium-low heat).
  • Step #3 Stir in cilantro.
  • Step #4 Grill corn until beginning to blacken in spots, turning every once in awhile, about 3 mins.
  • Step #5 Brush generously with glaze.
  • Step #6 Grill until glaze sets, about 3 mins longer.
  • Step #7 Transfer to platter & brush corn with extra glaze.
  • Step #8 Serve, passing remaining glaze & extra salt separately.
