Ingredients
1 tsp vegetable oil .
1 tsp salt .
Steak .
3/4 tsp dry mustard .
1 3/4 tsps garlic powder .
3 tbsps brown sugar .
1/2 tsp crushed red pepper flakes .
2 tbsps cider vinegar .
1 1/4 tsps ground cumin .
3 tbsps bourbon .
1 tsp ground coriander .
1 tsp paprika .
1 1/2 tsps worcestershire sauce .
2 (1 lb) flank steaks, trimmed .
1 1/2 c peach nectar .
3/4 tsp fresh ground black pepper .
1 tbsp brown sugar .
2 tbsps ketchup .
1 tbsp fresh lime juice .
2 garlic cloves, minced .
Sauce .
3/4 c sliced vidalia onions
Directions
Step #1 To make the sauce: heat oil in a saucepan over med-high heat; add in onion & garlic; stir/saute 5 mins or until tender.
Step #2 Add in nectar, 3 tbsps sugar, & vinegar; bring to a boil; cook this until reduced to 1 c (about 15 mins).
Step #3 Add in bourbon, Worcestershire, & pepper flakes; cook over med-heat/flame for 2 mins, ketchup, stirring every once in awhile.
Step #4 Remove from heat & stir in the lime juice; cool slightly.
Step #5 Pour sauce into a mixer; process until smooth.
Step #6 Prepare grill.
Step #7 To make the steak, mix 1 tbsp sugar & the next 7 ingredients; rub over both sides of steaks.
Step #8 Place steak on grill rack coated with cooking spray; grill 7 mins on each side or until desired degree of doneness.
Step #9 Cut steak diagonally across the grain into thin slices; serve this with sauce.
