Tropical Hawiian Chicken Recipe

Ingredients
  • 1 (8 oz) can unsweetened pineapple chunks (reserve juice) .
  • 1/4 tsp salt .
  • 1 banana .
  • 1 red pepper .
  • 1/4 lb fresh spinach .
  • 1/2 c bamboo shoots (drained) .
  • 1 1/2 tbsps cornstarch .
  • 3 stalks celery .
  • 1 lb boneless skinless chicken breasts .
  • 2 tbsps oyster sauce ((2 to 3) .
  • 1 large yellow onion .
  • 8 oz water chestnuts (canned) .
  • 1 slice gingerroot (1/4 inch thick, 2 Teaspoons red ginger) .
  • 1/4 lb mushrooms .
  • 1 1/4 c chicken broth .
  • 2 tbsps vegetable oil or peanut oil

Directions
  • Step #1 Slice chicken into 1 1/2 inch long pieces.
  • Step #2 Slice the water chestnuts, mushrooms & yellow onion.
  • Step #3 Wash the spinach; remove & discard tough stems, slice the leaves.
  • Step #4 Thinly slice red pepper; reserve for garnish.
  • Step #5 Julienne the bamboo shoots, gingerroot & celery.
  • Step #6 Heat a wok or large skillet until very hot.
  • Step #7 Add the oil.
  • Step #8 When the oil is very hot, add the sliced chicken.
  • Step #9 Toss the chicken with chopsticks or two wooden spoons;.
  • Step #10 stir-fry for about 2 mins or until chicken starts to lose its pink color.
  • Step #11 Add the bamboo shoots, celery, gingerroot, water chestnuts,.
  • Step #12 mushrooms, onion, oyster sauce & salt to the chicken in the wok.
  • Step #13 Stir-fry a few mins longer, tossing with two chopsticks.

  • Step #22 Stir the cornstarch mixture back into the chicken mixture in the wok.
  • Step #23 Cook over med-heat/flame, stirring, about 2 mins or until the sauce is.

  • Step #26 Remove wok from heat & add the chicken mixture; toss carefully with the chopsticks.
