Chicken Curry Crepes Recipe

Ingredients
  • 16 crepes (I use store bought) .
  • 1 1/2 c whipping cream .
  • 4 c cubed cooked chicken breasts .
  • 1/3 c sliced peanuts (to garnish) (optional) .
  • salt & pepper .
  • 3 tbsps flour .
  • 3 tbsps butter, melted .
  • 2 tbsps curry powder (I use "S&B Oriental curry powder") .
  • 1 c finely sliced onions .
  • 2 tbsps shredded coconut .
  • 2 c chicken broth .
  • 3/4 c golden raisins or regular raisins .
  • 2 tsps sliced fresh parsley

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Saute onion & parsley until onion is soft but not brown.
  • Step #3 Stir in flour & curry & cook for a couple of mins.
  • Step #4 Gradually stir in the chicken broth & cream.
  • Step #5 When smooth, add coconut & let simmer for five mins.
  • Step #6 Add half the curry sauce to the chicken & raisins.
  • Step #7 Place 2 to 3 tbsps of chicken mixture on each crepe.
  • Step #8 Roll the crepes & place seam side down in a buttered baking dish.
  • Step #9 is.
  • Step #10 Cover up with remaining curry sauce.
  • Step #11 Crepes may be put in the fridged at this point for several hrs or baked in preheated oven for 30 mins or until sauce bubbles.
  • Step #12 Sprinkle top with nuts & bake for five mins.
