Passover Brownie Cupcakes Recipe

Ingredients
  • 5 eggs, lightly beaten .
  • 1 c butter or margarine (255g) .
  • 3 tbsps matzo cake meal .
  • 2 tbsps butter or margarine .
  • 9 oz bittersweet chocolate .
  • 1 1/3 c sugar

Directions
  • Step #1 Preheat oven to 325F degrees F/160 degrees Celsius.
  • Step #2 Roughly chop the chocolate into pieces Put the chocolate in a medium-sized bowl & add the one c of butter.
  • Step #3 Place the bowl over a saucepan of simmering water, stir until the two ingredients have melted.
  • Step #4 Mix well & transfer to a large bowl; set aside.
  • Step #5 Sift the sugar & matzoh cake meal together, then stir in theto the chocolate.
  • Step #6 Add the eggs & mix well.
  • Step #7 Cover up & let this stand at about room temp for 30 mins.
  • Step #8 The batter will slightly thicken.
  • Step #9 In the meantime, line a muffin pan with paper ccake or grease with the 2 tbs butter or margarine.
  • Step #10 Spoon 1/4 c batter into each c.
  • Step #11 Bake in preheated oven for 30 to 35 mins.
  • Step #12 The brownies will still be moist when done; they will puff up & fall slightly as they cool.
  • Step #13 Remove from oven & cool in pan for 5 mins, then remove this from pan & let cool completely.
