Butter-scotchies Recipe

Ingredients
  • 1 c butter (2 sticks) .
  • 1 tsp baking powder .
  • 1 c brown sugar .
  • 2 c butterscotch chips (an 11 oz package will do just fine) .
  • 1 tsp vanilla extract .
  • 2 c flour (don't sift pack it down in the c) .
  • 1/2 tsp salt .
  • 1/2 tsp baking soda .
  • 1 1/2 c rolled oats .
  • 1 c granulated sugar .
  • 2 eggs, beaten

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Melt the butter In a large-ish microwave-safe bowl.
  • Step #3 Add the bown & white sugars & let it cool a bit.
  • Step #4 Then add the eggs, baking powder, salt, baking soda, & vanilla.
  • Step #5 Mix in the flour & then the butterscotch chips.
  • Step #6 Add the rolled oats & mix in thoroughly.
  • Step #7 Let the dough rest, uncovered, for 10 mins to allow the butter to solidify.
  • Step #8 You can either drop this dough by the rounded tsp onto a greased cookie sheet, or roll the dough balls with your hands & place them on the cookie sheet, 12 to a sheet, pushing them down a bit so they don’t roll off on the way to the oven.
  • Step #9 Bake at 350 degrees for 12-15 mins.
  • Step #10 Cool on the cookie sheet for 2 mins & then remove them to a wire rack to cool completely.
