2 c butterscotch chips (an 11 oz package will do just fine) .
1 tsp vanilla extract .
2 c flour (don't sift pack it down in the c) .
1/2 tsp salt .
1/2 tsp baking soda .
1 1/2 c rolled oats .
1 c granulated sugar .
2 eggs, beaten
Directions
Step #1 Preheat oven to 350 degrees.
Step #2 Melt the butter In a large-ish microwave-safe bowl.
Step #3 Add the bown & white sugars & let it cool a bit.
Step #4 Then add the eggs, baking powder, salt, baking soda, & vanilla.
Step #5 Mix in the flour & then the butterscotch chips.
Step #6 Add the rolled oats & mix in thoroughly.
Step #7 Let the dough rest, uncovered, for 10 mins to allow the butter to solidify.
Step #8 You can either drop this dough by the rounded tsp onto a greased cookie sheet, or roll the dough balls with your hands & place them on the cookie sheet, 12 to a sheet, pushing them down a bit so they don’t roll off on the way to the oven.
Step #9 Bake at 350 degrees for 12-15 mins.
Step #10 Cool on the cookie sheet for 2 mins & then remove them to a wire rack to cool completely.
