Zesty Tequila Shrimp Gazpacho Recipe

Ingredients
  • 4 1/2 c v 8 spicy vegetable juice .
  • 1 small purple onion .
  • 1 oz tequila .
  • 2 large celery ribs .
  • 1/2 tsp black pepper .
  • 2 tbsps olive oil .
  • 4 c tomato juice .
  • 1/4 c green onions (sliced) .
  • 3 garlic cloves (minced fine) .
  • 1 small green bell pepper .
  • 2 tbsps red wine vinegar .
  • 1 1/2 tsps salt .
  • 6 small roma tomatoes .
  • 2 large cucumbers .
  • 3 tbsps lime juice .
  • 1 lb small shrimp (cooked)

Directions
  • Step #1 Wash vegetables.
  • Step #2 Chop purple onion, celery, bell pepper, unpeeled cucumbers, & tomatoes.
  • Step #3 Place sliced vegetables into a large bowl.
  • Step #4 Add finely minced garlic, salt, & pepper, olive oil, tequila & cooked shrimp; stir carefully to mix all.
  • Step #5 Stir in lime juice & red wine vinegar.
  • Step #6 Stir in tomato juice & V-8 juice.
  • Step #7 Cover up with plastic wrap & place this in fridge until well chilled (about 1 hr for flavors to mix).
  • Step #8 To serve, ladle each portion into a serving bowl & sprinkle each with desired amount of the sliced green onion.
