Step #3 Place split hens in oblong baking dish & pour tequila mixture over; turn hens to coat.
Step #4 Cover up & marinate, turning once or twice, overnight in refrigerator.
Step #5 Remove from refrigerator & let set at about room temp about 1 hr before cooking.
Step #6 Preheat oven to 400°F.
Step #7 Coat a shallow baking pan with nonstick cooking spray.
Step #8 Remove hens from marinade & arrange, skin-side up, in baking pan.
Step #9 Spice up with salt & pepper to taste.
Step #10 Bake at 400F degrees on upper rack of oven, pierced at their thickest part, basting every once in awhile with marinade, run pinkish-yellow, until skin is golden & juices from thighs, 30-40 mins.
Step #11 Boil remaining marinade & pour over hens just before serving.
Step #12 (Add more tequila if needed, to make enough sauce).
