Loaded Barbecue Baked Potato Casserole Recipe

Ingredients
  • 3 c shredded barbecued pork or barbecued beef (I would use the grocery store container type, or from the deli) .
  • 1/2 tsp pepper .
  • fresh parsley (to garnish) .
  • 1 (4 oz) can sliced green chilies, drained .
  • 1 (8 oz) container light sour cream .
  • 1 c shredded monterey jack pepper cheese .
  • 3/4 c barbecue sauce .
  • 1/2 tsp salt .
  • 6 slices bacon .
  • 2 c milk .
  • 1 (22 oz) package frozen mashed potatoes .
  • 1/2 (8 oz) package light cream cheese, cut into cubes .
  • 3 c shredded cheddar cheese, divided

Directions
  • Step #1 Cook bacon in large skillet over medium-high heat until crisp, 8-10 mins.
  • Step #2 Remove bacon & drain on paper towels, reserving 2 tbsps drippings.
  • Step #3 Crumble bacon & set aside.
  • Step #4 Stir together reserved bacon drippings, next 5 ingredients, potatoes, & 2 c cheddar cheese In a large-ish microwave safe bowl.
  • Step #5 MIcrowave on HIGH 4 mins.
  • Step #6 Stir in sour cream & chiles until well mixed.
  • Step #7 Spoon potato mixture into a lightly greased 13X9" baking dish.
  • Step #8 Sprinkle top evenly with bacon & remaining 1 c cheddar cheese.
  • Step #9 Arrange pork evenly over cheese.
  • Step #10 Drizzle barbecue sauce evenly over pork.
  • Step #11 Bake at 350 degrees for 45 mins.
  • Step #12 , Let stand 10 mins before serving.
  • Step #13 Garnish with sliced parsley.
