The Plumber's Favorite Coconut Pies Recipe

Ingredients
  • 2 c sugar .
  • 10 tbsps sugar .
  • 1 1/2 c coconut .
  • 1 (9 inch) unbaked deep dish pie shells .
  • 1/4 c butter, softened .
  • 2 tbsps cornstarch .
  • 2 c milk .
  • 1 tsp vanilla flavoring .
  • 5 eggs, separated

Directions
  • Step #1 Beat egg yolks until fluffy.
  • Step #2 Slowly add sugar, butter, milk, vanilla flavoring & cornstarch.
  • Step #3 Stir in coconut by hand.
  • Step #4 Mix well & pour this into unbaked pie shell.
  • Step #5 Bake at 325F degrees for 30-40 mins or until center is set, but top is not too brown.
  • Step #6 In a separate bowl, beat the egg whites until soft peaks form.
  • Step #7 Slowly add the 10 Tbsp sugar, & continue beating until meringue is stiff, but not "dry".
  • Step #8 Remove pie from oven & top this with meringue; return to oven until meringue is slightly brown.
  • Step #9 Cool completely before serving & put in the fridge any leftovers.
