Ingredients
1/2 c 1% low-fat milk .
2 tbsps butter or margarine, melted .
1 tbsp fresh lime juice .
1/4 c sugar .
1 tbsp fresh lemon juice .
1 tsp lemon peel, grated .
1/3 c nonfat sour cream .
2 tbsps brown sugar .
1 tsp vanilla extract .
2 (8 oz) packages fat-free cream cheese .
1 c graham cracker crumbs .
3 egg whites .
1 tsp lime peel, grated .
non-fat cooking spray .
1/2 c sugar .
2 eggs .
1 tsp orange peel, grated .
1 tbsp fresh orange juice .
1/3 c wheat flour
Directions
Step #1 Preheat oven to 300º F.
Step #2 Prepare the crust: Coat a 9-inch springform pan with cooking spray.
Step #3 In a medium bowl, mix crumbs, brown sugar & butter then firmly press mixture into bottom & 2 inches up the sides of the pan.
Step #4 Prepare the filling: In a large sized mixing bowl, cream cheese, mix sugar & flour then add vanilla, & eggs.
Step #5 Beat until smooth.
Step #6 Add milk, sour cream, citrus juices & peels & beat until smooth.
Step #7 In a separate mixing bowl, using clean & dry beaters, beat egg whites at about room temp at high speed until soft peaks form.
Step #8 Gradually add 1/4 c sugar, 1 tbsp at a time & beat until stiff peaks form.
Step #9 Gently fold egg white mixture with cream cheese mixture.
Step #10 Pour into prepared crust & bake this at 300º F for 1 hr or until set.
Step #11 Remove from oven & let completely cool on a wire rack.
Step #12 Cover up & chill for 4 hrs or overnight.
Step #13 Sprinkle top with grated lemon, lime & orange zest before serving (optional.
