Hunter Style Chicken- Chicken Chasseur Recipe

Ingredients
  • 1/3 c drained canned sliced tomatoes .
  • 3 1/2 c chicken broth .
  • 8 oz white button mushrooms, sliced .
  • 1 tbsp minced fresh parsley .
  • 1/2 c dry white wine .
  • 3 tbsps cold butter (cut into 4 pieces) .
  • 4 bone-in skin on chicken breast halves .
  • 3 tbsps brandy (or cognac) .
  • 1 tbsp minced fresh tarragon .
  • 1 minced medium shallot .
  • 2 tbsps vegetable oil

Directions
  • Step #1 Sprinkle top salt & pepper over chicken.
  • Step #2 Heat oil in skillet over med heat.
  • Step #3 Add chicken breasts, skin down, & cook without moving them until skin is crisp & well browned, 5 to 8 mins.
  • Step #4 Turn chicken over & cook for extra 5 mins or until chicken is browned on other side.
  • Step #5 Remove chicken from pan & set aside.
  • Step #6 Pour off all but 2 tbs of fat from pan.
  • Step #7 Add mushrooms & cook over medium-high heat until mushrooms start to brown (6 to 8 mins).
  • Step #8 Reduce heat to medium & add shallots, cook this until soft (about 1 min).
  • Step #9 Remove pan from heat & add brandy.
  • Step #10 Let stand until brandy warms slightly, about 10 seconds.
  • Step #11 Wave a long match over skillet until brandy ignites.
  • Step #12 Return pan to medium-high heat & shake skillet until flames die.
  • Step #13 Add wine.
  • Step #14 Using wooden spoon, scrape browned bits from pan bottom & let simmer for about 3 mins.
  • Step #15 Add broth & tomatoes & let simmer over medium-high heat for about 25 mins.
  • Step #16 While sauce is simmering, put chicken on a baking sheet & put in oven for 15-20 mins or until chicken reads 160 degrees.
  • Step #17 When chicken is done, put on serving dish & cover with tent of foil wrap.
  • Step #18 When sauce is done, whisk in butter, one piece at a time until incorporated.
  • Step #19 Add parsley & tarragon & salt & pepper to taste.
  • Step #20 Spoon sauce over chicken.
  • Step #21 Serve.
